Spontaneous fermentation in cement without the addition of yeasts, enzymes and others
oenological adjuvants. Maceration with 100% stems for 3-4 weeks. None
clarification and filtration. Maturation in 225 liter third passage oak barrels and then
cement before bottling. Bottling 24 months after the harvest and aging in glass for 24 months.
