After manual harvesting with sorting on the plant and on the table when necessary, whole bunch semi-carbonic fermentation with cold pre-fermentation begins. Natural yeasts, without SO2, without sugaring or enzymes, but with only joy and a festive spirit.

The maturation takes place in barrels, without decanting, assembled in a large tank 40 days before bottling. Bottled with nitrogen, without filtration, in September.
