It comes from old vineyards, some of which are over 60 years old, grown organically on the rocky soils of the Vallee d'Ibie. The wild fermentation with the grape's native yeasts is followed by maturation in large wood for 18-20 months before bottling without fining, filtration or addition of SO2.
