Low vine, planted with Chardonnay clonal selection in the 1960s. Pebbly, clayey-limestone soil. Cultivation without chemical inputs. Manual harvesting. Direct pressing, cold decantation without sulphur. Placed in three-year-old 350 l oak barrels, vinification at low temperature, without sugaring.
Aging for 14 months on yeasts without sulphur, no fining, no filtration. Tense with a lot of freshness.
