Alice and Olivier De Moor don't like chemistry or inputs including sulphur. And their wines from the Courgis vineyards are of immense purity. They have become one of Chablis' references. Nuova Descriptio is made from a blend of Saint Bris Sauvignon, macerated Aligoté and three barrels of Chardonnay. Very pure, fresh and intense, it is a resounding success! It's a fantastic wine!
